Basic principles and procedures of food control adopted in EU member countries and also requirements on the competence of testing laboratories involved in sampling are explained.
Strategy of sampling plans designing and commonly used techniques and rules used for sampling of food and environment are discussed. Validation of sampling procedures and analytical methods including uncertainty assessment is also an important part influencing the credibility of food / environment quality examination reports.

1. Strategy of sampling and analysis - selection of fit-to-purpose methods; sampling procedures and basic rules, representativeness. 2. Sampling plan designing, sampling techniques and devices, criteria and conditions used in different branches. 3. Sampling procedure and documentation, handling of samples, labelling, protection and preservation of samples, transportation; handling and storage of samples in laboratory. 4. Validation of sampling procedure, quality control measures and requirements on analytical laboratories. 5. Examples of sampling (case studies): food (packed, unpacked), crops, feed, water, soil, air, etc. 6. Technical requirements on measurement and analyses performed on-site (out of testing laboratory). 7. Interpretation of test results in relation to the sampled object / commodity, the role of statistical sampling plans. 8. Quality management in sampling and testing, interlaboratory comparison, traceability of results. 9.
