Annotation -
The subject targets to the identification and quantification of chosen food-born pathogens according to valid EU ISO norms. The subjekt is also focused on molecular biology and immunochemical methods of identification and to the detail characterization of studied microorganisms.

Syllabus -

1. Safety rules in microbiological laboratory, preparation of sterile medium and instruments.

2. Preparation of defined, selective and complex media.

3. Sampling, homogenization of food samples, dilutions, inoculation.

4. Processing of food samples (ready to eat food- RTF).

5. Processing of food produce for heat treatment.

6. Processing of beverages samples.

7. Determation of total count of aerobic and facultatively anaerobic mezophilic bacteria, determination of coliform bacteria and yeasts and molds.

8. Performance of standard cultivation determination following ISO norms of: Bacillus cereus, Escherichia coli, Staphylococcus aureus.

9. Performance of standard cultivation determination following ISO norms of:Salmonella sp., Listeria monocytogenes.

10. Quantitative evaluation of all performed analysis and their assesssment.

11. Lateral flow immunochemical test for confirmation of Listeria monocytogenes and Salmonella sp.

12. Membrane filtration of water, cultivation and evaluation of samples.

13. Rapid identification methods for the identification of food-born pathogens.

14. Principles of qualitative and quantitative procedures of polymerase chain reaction - PCR for the detection of food-born pathogens. Disposal od all used cultures and media.
