Annotation -
The subject has two parts: Chemistry of saccharides (carbohydrates) and Analysis of saccharides. The following topics of lectures: nomenclature, chemistry of saccharides´ reactions under different conditions, synthesis of derivatives, physico-chemical properties of important oligo-, polysaccharides, cyclodextrins and dendrimeres. Sources and properties of natural glycosides. Analytical part is devoted to methods of determination of mono-, oligo- and polysaccharides and structure of polysaccharides.

Srtudents will be able:

To propose the set of physico-chemical metods with aim to solve composition and structure of mono-, oligo- and polysaccharides

To propose reactions to prepare derivatives or modification of saccharides and polysaccharides

1. Definition, nomenclature and structure of carbohydrates

2. Physico-chemical properties of carbohydrates

3. Reactions of carbohydrates under acid or alkali conditions. Thermal degradation.

4. Oxidation and reduction of carbohydrates

5. Synthesis of carbohydrate derivatives. Importance of protective groups.

6. Important natural and synthetic glycosides

7. Important monosaccharides, oligosaccharides and their derivatives.

8. Production and application of polysaccharides

9. Methods of sampling, isolation and proof of saccharides

10. Chemical methods of carbohydrates analysis

11. Gas and liquid chromatography of carbohydrates. Size exclusion chromatography of oligo- and polysaccharides

12. Nutrition value of saccharides and evaluation of energetic value of food products with higher content of saccharides

13. Determination of polysaccharides structure by spectroscopic methods

14. Thermal and other physical methods applied to analysis of polysaccharides
