Annotation -
The aim of the course is to provide students with essential analytical training focused on the determination of the basic composition of foods. Students work with analytical instruments and equipment to gain practical experience in the application of analytical methods, to learn how to correctly evaluate the obtained data, and to process them into the required format in accordance with applicable legislative requirements.

Teaching methods -

The course is conducted in small student groups, who work on a specific task under the guidance of a teaching assistant. At the beginning of each task, the assistant verifies the students’ prior knowledge, explains the practical execution of experiments in the laboratory setting, and is available for consultations as needed. Immediately after completing the task, the students’ notes and interim results in their laboratory notebooks are checked, and the final report is reviewed upon submission.

The laboratory course is completed with a graded credit, which students receive upon submission of all protocols and successful completion of the final test.

Syllabus -

1. Introductory instruction (laboratory rules, occupational health and safety, fire safety) and verification of knowledge via an entry test

2. Determination of nitrogen using the Kjeldahl method

3. Determination of fat content and its oxidative rancidity using Soxhlet extraction and peroxide value determination

4. Determination of fatty acids by gas chromatography with flame ionization detection (GC-FID)

5. Determination of mineral elements using atomic absorption spectrometry, spectrophotometry, and titration

6. Determination of ascorbic acid by high-performance liquid chromatography (HPLC) with UV detection and potentiometric titration

7. Characterization of vegetable oils using Fourier-transform infrared spectroscopy (FTIR)

8. Determination of phosphoric acid, nitrites, and nitrates by spectrophotometry

9. Determination of carbohydrates using polarimetry

10. Sensory analysis

11. Final credit test

  • Carry out the practical realization of the methods applied for the determination of basic food ingredients.
  • Operate devices and equipment in accordance with the requirements of the realization of analytical methods in food analysis.
