The course contains the basic areas of food chemistry, physico-chemical, biochemical, sensory and other properties of individual components, their functions and major interactions and reactions which take place in foods during storage, culinary and technological processing. Students will be introduced mainly to the basic components of nutrition, ie proteins, fats and carbohydrates in their various forms, but also to essential dietary factors (vitamins, minerals) and antinutritional and toxic substances.

Náplní předmětu jsou základní okruhy o chemickém složení potravin, fyzikálně-chemických, biochemických, senzorických a dalších vlastnostech jednotlivých složek, jejich funkci a významných interakcích a reakcích, které v potravinách probíhají při skladování, kulinárním a technologickém zpracování. Studenti budou seznámeni především se základními složkami výživy, tj. bílkovinami, tuky a sacharidy v jejich rozmanité podobě, ale také s dalšími esenciálními výživovými faktory (vitamíny, minerálními látkami) i látkami antinutričními a toxickými.

K udělení zápočtu je nutné splnit pět kontrolních testů v průběhu semestru, popř. úspěšně absolvovat dodatečný souhrnný test. Udělený zápočet je nutnou podmínkou pro skládání zkoušky. Zkouška je kombinovaná - písemná a ústní.
